Sticky toffee banana pudding is an exciting combination of ripe banana flavor, warm toffee sauce, and Domino Majoon ice‑cream mousse — every spoonful feels like a true celebration of flavors. Ingredients

For the Banana Pudding

  • Flour: 254 g
  • White sugar: 100 g
  • Brown sugar: 100 g
  • Salt: ½ tsp
  • Cinnamon: ½ tsp
  • Baking soda: ¾ tsp
  • Very ripe bananas: 340 g
  • Yogurt or sour cream: 60 g
  • Large eggs: 2 (lightly whisked by hand)
  • Vegetable oil: 3 tbsp
  • Melted and cooled butter: 43 g
  • Vanilla: a little

For the Majoon Ice‑Cream Mousse

  • Domino Majoon ice cream: 220 g
  • Domino cream: 80 g
  • Bloomed gelatin: 25 g

For the Toffee Sauce

  • Domino cream: 125 g
  • White sugar: 50 g
  • Brown sugar: 125 g
  • Butter: 75 g

Instructions

How to Make the Banana Pudding

  1. Mix the sifted flour with white sugar, brown sugar, salt, cinnamon, and baking soda. Make sure the brown sugar is fresh and soft.
  2. In another bowl, combine the mashed bananas, yogurt, oil, melted butter, eggs, and vanilla. Whisk by hand until smooth and well combined.
  3. Gradually add the dry ingredients to the banana mixture and gently fold until the batter is uniform.
  4. Pour the batter into a baking pan and bake in a preheated oven at 175°C for 25–30 minutes, until the top turns golden.

How to Make the Majoon Ice‑Cream Mousse

  1. Whip the Domino Majoon ice cream until it softens slightly.
  2. Heat the cream over low heat, and once it begins to boil, add the gelatin and stir until fully dissolved.
  3. Pour the cream‑and‑gelatin mixture into the softened ice cream and mix until completely smooth and uniform.
  4. Transfer the mixture into a mold and place it in the freezer until fully set.

How to Make the Toffee Sauce

  1. Place all the ingredients in a saucepan over low heat.
  2. Stir continuously until the mixture comes to a boil and the sugars dissolve completely.
  3. Once the sauce thickens, remove it from the heat — it’s ready to serve.

Final Assembly

  1. Remove the banana pudding from the mold and level the top using a serrated knife.
  2. Take the Majoon ice‑cream mousse out of its mold and place it on top of the puddings.
  3. Decorate the edges with roasted hazelnuts.
  4. Slice the bananas, sprinkle a little sugar on top, and use a kitchen torch to caramelize them until glossy and golden.
  5. When serving, pour the warm toffee sauce over the dessert and enjoy the incredible combination of pudding, ice cream, and toffee.
